Propuesta de mejora del proceso de empaquetado de filetes de Paiche en el cantón Lago Agrio provincia de Sucumbíos

Abstract

In the Amazon region, in the Lago Agrio canton, the company Ortiz S.A is established, which is dedicated to the production and distribution of Paiche fillets. Within this process, there are activities such as growing, slaughtering, cleaning the fish, cutting and packaging it. Through the analysis and application of observation and the process diagram, it was determined that the technical failure is specifically found in the artisanal packaging process, for which, using the value chain methodology, defined vacuum packaging as a technical solution and created a prioritization matrix for the selection of machinery for vacuum packaging, which guarantees greater durability over time, better conservation of the organoleptic properties of the product and lower risk of contamination by bacteria that give an added value to Paiche fillets. In this way, considering all of the above, a financial simulation was carried out to observe the feasibility and economic benefit that the company would have with the implementation of the machinery.
